RESTAURANT CAPTAIN
Duties:
  • Assist the Restaurant Manager in overseeing service of the Restaurant
  • Greet and coordinate the seating of guests and assign guests to tables suitable to the size of each group
  • Recognise regular guests and highlight to the Chef about any particular guest preferences
  • Ensure guest requests are not delayed during the operations of the Restaurant
  • Record and report all food-related complaints to the Chef immediately
  • Ensure team briefings are carried out before each service period
  • Ensure that no standing bills stay on the system and account for all voided transactions
  • Promote the Restaurant by establishing a loyal and regular customer base, maintaining a regular customer database and personalising customer service
  • Handle emergencies and difficult situations
  • Adjust any modifications to checks or bills
  • Ensure that the Supervisors and Service Crew are able to describe the dishes and any specials, and are well groomed, properly attired and efficient
  • Maintain the highest standards of cleanliness, the maintenance of furnishings & equipment and the proper setup of the Restaurant and connecting areas or pantries
  • Participate in monthly physical stocktake of the Restaurant
  • Assist the Restaurant Manager in implementing and developing training programs
  • Assist customers in choosing suitable wines by describing the taste and aroma of different wines and answering questions about the wine menu
  • Work with Executive Chef to assist in planning of food and wine menus
  • Organise the wine storage system
  • Assist in managing wine inventory
  • Maintain relationships with wine suppliers
  • Perform miscellaneous job-related duties as assigned

  • 立即记录所有与食物有关的投诉并将其报告给厨师
  • 确保在每个服务期之前进行团队简报
  • 确保没有固定账单留在系统上,并说明所有无效交易
  • 通过建立忠实的定期客户群,维护定期的客户数据库和个性化客户服务来提升餐厅
  • 处理紧急情况和困难情况
  • 调整对支票或账单的任何修改
  • 确保主管和服务人员能够描述菜肴和任何特色菜,并经过精心修饰,正确着装和高效
  • 保持最高标准的清洁度,家具和设备的维护以及餐厅和连接区域或餐具室的正确设置
  • 参加餐厅每月实物盘点
  • 协助餐厅经理实施和制定培训计划
  • 描述不同葡萄酒的味道和香气,并回答有关葡萄酒菜单的问题,以帮助客户选择合适的葡萄酒
  • 与行政总厨合作,协助计划食物和葡萄酒菜单
  • 整理葡萄酒储存系统
  • 协助管理葡萄酒库存
  • 与葡萄酒供应商保持关系
  • 履行与工作相关的杂项职责
